Birthday Breakfast

We just celebrated two very special birthdays. Our sons have birthdays that are one day apart, which lends to a very exciting December. Growing up, my mom began our special day with the breakfast of our choice. I always chose blueberry muffins. Not the blueberry muffins in the little blue box that were the occasional treat. I chose the streusel topped blueberry muffin with the super moist muffin and crumbly, delicious topping. And there were “real” blueberries in these muffins (as opposed to the budget friendly muffins with little pebble blueberries that always bewildered me)!

Speaking so much about muffins, you might think that this post would lead to a fabulous blueberry muffin recipe. Well, learn now that I digress easily and I love shiny pennies! To celebrate the lives of my first two bundles of joy, I give to you one of my favorite and most delicious recipes to date. It’s also what my middle child, Cruz, asks for on any special occasion, especially his birthday. A perfect Paleo pancake.

It’s very similar to a griddle cake and it literally makes me swoon. An almost crisp outer layer complements a fluffy, soft middle. It’s pure deliciousness and pure oh-so-good for you. These pancakes are gluten and grain free so please enjoy these babies without any guilt. I do!

The Perfect Paleo Pancake

ingredients

1 1/2 cups of almond flour (this one is my fav and is also available at Costco)

1/2 cup arrowroot starch

1 tsp baking powder

1/4 tsp sea salt

1 TBL vanilla

2 TBL maple syrup

2 eggs

1/2 cup almond milk

3-4 TBL butter for greasing the pan or skillet

Heat your skillet or pan to just above medium. Mix all dry ingredients together until well blended. Add all wet ingredients. Mix well. Once skillet is heated, add a Tablespoon of butter and swirl around skillet. Immediately ladle batter (1/4 cupish makes a pancake) and continue until you have laid 3-4 pancakes on your skillet. These will not bubble as much as a traditional flour pancake. Once you see a few bubbles around the perimeter of the pancake, flip your first one and check for golden perfection. Adorn with your favorite toppings or simply with pure maple syrup for a breakfast sure to knock your socks off!

**I don’t recommend making these pancakes larger than four inches, as they are much harder to flip. With that said, my oldest son, Noah, loves a large pancake and has somehow perfected his flipping process while I still tear anything larger than the four inch cake.

  1. Wow! Deelicious, B. Inspired by your blogging about the blueberry muffins, I added 1 cup frozen blueberries. The fam and I are about to devour them now. I’ll report back with taste testing results. I wanna try one of Noah’s giant cakes one day soon. I love you.
