Kale + Kate

Today I thought I’d share one of my favorite recipes using the Queen of Greens – Kale! It’s a wonderful winter green that provides SO many delicious nutrients when eaten (fiber, folate and Vitamins A, C and K to name a few). This amazing green has become one of my favorite edibles that God has so generously gifted us. It’s such a hearty green it’s even proven itself against light ice and snow in our garden! Strength

Well, it’s been awhile since my yoga mat and I have had a date. Like, maybe, creeping on 3 months awhile. I think we had a 30 minute power lunch next to my bed one day in December. But it was a long December, a blur to be honest, and that could very well be a false statement. I looked at my schedule for this week and decided Hump Day would be my January 1st. Twenty seven days late really isn’t so bad if you’re a Kerby…or a Ferguson…or most anyone related to me. I felt like we were on a first date. I was a little shy and feeling a bit self conscious to say the least. Love…and Utter Joy

Wow. You know that feeling you get when you set out to do something that could totally flop? You could fail and land face down first and eat mud? OR you could fly and breathe and feel complete exhilaration and utter joy? Well, the release of this blog last week did just that for me. I rolled out a similar concept a few years ago to little reception but plugged through for a few months until I finally let it fizzle. In the midst of my fizzling, I found out I was pregnant with Stella and work more than doubled – all big and beautiful Life happenings. On top of all of these Life happenings, a little voice in my head kept saying “Next month. You can pick it up again next month…” Excuse after excuse kept popping up until I finally realized tomorrow would never come unless I re-organized my time, stated my goal out loud (to real, live people) and set the date. My Favorite Food

I thought I would kick off my first post by paying homage to my absolute favorite food in the world. I selected a recipe that highlights its creamy, luscious delicousness. Without further ado, I present – the avocado. Do you ever play the favorite game with your family? Or on a first date? I haven’t dated in awhile, so I’m not sure if that’s really relevant, but if you haven’t tried it, you should. It’s a quick way to find out loads of info about someone. My oldest loves to play. He is quite the lover of food, too, so his first question is always, “what’s your favorite food?”. Without skipping a beat, my answer is always “avocado”. Its rich but delicate flavor is able to stand alone or in a plethora of other amazing ways. From sauces to dips, salads and  desserts. Yes, my friends, desserts. I have an AH-MAZING avocado mousse that you will see find here another time. Even an anti-avocado eating, 12 year old boy was swooning over it!
